Mobile Logo - missing
Currently, we can only select Desktop Logo (Light and Dark) / or Mobile.
But we are not able to customize which logo should be showing on Desktop and Mobile (desktop: may allow more complete versions while; mobile: isotype ones).
Jorge de los Reyes, If I am correct, your concern is:-
On desktop, you might want to use a full, detailed logo (with text, tagline, etc.), but on mobile, you often want a simpler, smaller, or just the icon/isotype version of your logo for better visibility and fit.
Currently, there is no separate option to upload a logo specifically for mobile devices. However, the current logo will display on mobile devices (it’s responsive). It will be the same logo as the desktop, just resized.

You understood perfectly well what I was trying to share.
Basically, a brand, can have a more "complete" icon (eg.: the ninja and the word WP MANAGE NINJA; or the "T" of Tesla and "Tesla" wording) and you may want that full logo to be shown on desktop.
And just the ninja, or the T on mobiles.
It's very common, on page builders, and themes, to allow the user to have both options: desktop and mobile. And in both, options for light and dark.
So yeah.
it'd me quite handy to have this option. Because on mobile, a complete logo would not be, by definition, proper sized (it will be very small or cropped), so we would use, as we want, the Icon. But, if we use the icon on mobile, it will be also be shown on desktop. Where the full logo makes more sense 😄
