Segmenting My List better - Process Help with lists, tags & email sequence

I am looking for some advise on the best process to help segment my subscribers better. I used both Fluentforms and FluentCRM. I have recently created a exit intent pop-up form for a coupon for my online course/classes. I am getting confused with where and how to start segmenting them.

I would like them to get added to either of 2 lists (one gardening etc and the other yoga etc). Ive tried a couple of ways and its confusing and complicated.

What is the most streamline way to go about this? After they get added to either list I would like to send them to a relevant welcome email sequence

Im getting kind of confused where and when to use goals vs conditions in the email automation.

example of what I have started but not sure its the best:

• Is it better to add a multiple chose question to the form and then try and use the dynamic tagging? Then how to a create the email sequence to follow this? (keeping in mind I would rather them go straight onto ether/or both lists and not just get tagged.
• Or is there a way to use the condition to do this. It doesnt seem to me this would work if they check both list options on the form?

If someone could lay it out step by step that would be super helpful. thx!
