Regarding the CloudFlare Outage
I read about this in another group. Maybe something to check into just in case.
Matt Zimmerman Stripe does not use Cloudflare, and Stripe payment element was not affected by the Cloudflare outage at all. Most probably, SureCart's API was affected by Cloudflare (They use Cloudflare DNS). So your store will depend on SureCart's platform stability and its underlying network infrastructure.
FluentCart does not depend on any external platforms. It's 100% on your server. Your checkout will never go down unless your server or the payment gateway (stripe/paypal/others) goes down.
